GATEAU MADE WITH CANDIED FRUIT AND RAISINS IN MY MOTHER’S

INGREDIENTS (6 persons)

3 Eggs
125 grams granulated sugar
165 grams plain flour
125 grams unsalted butter
150 grams of mixed raisins and candied fruit
¼ sachet of baking powder

THE METHOD

· Preheat the oven to 200 degrees

· In a bowl, whisk together the sugar and butter until smooth. Add the eggs, one by one. Stir in the flour, baking powder and fruit, making sure the fruit is evenly mixed in

· Butter a rectangular cake tin. Pour in the mixture

· Place in the oven and bake for 15 minutes at 200 degrees and then lower the temperature to 180 degrees for a further 30 minutes

· Test with a knife that it is done

· Remove and allow to cool
