HOW TO MAKE A CHICKEN STOCK

THE METHOD for 1 Litre

* In a large saucepan, blanch 1.2 kilos of fresh chicken
giblets. Cool under running water. Drain and dry

* Add 100 grams of carrots, 1 celery stalk, 80 grams of
chopped onions, 1 chopped leek, 1 clove of garlic, 1
bouquet garni and 1 clove

* Add 1.5 litres of cold water and bring to the boil.
Simmer over a low heat for 1½ hours. Boil again for 5
minutes and skim off any fat from the surface
