SALMON MARINATED IN FRESH GARDEN HERBS

INGREDIENTS (6 persons)

1 Fillet (whole) of fresh salmon – about 1.5 kilos
1 Kilo of coarse sea salt
Parsley, chives, bay leaves, thyme and pepper
10 cl of olive oil

THE METHOD

· Trim the salmon fillet and marinate in the salt for 6 hours

· Soak in water for 30 minutes to remove the salt. Dry the salmon and coat with fresh herbs

· Cut the salmon fillet along its width and place on the plate ready for serving

· Dress the pieces of salmon with the olive oil and season with the fresh chopped herbs. Add pepper to taste

· Serve with lightly toasted bread
